Australian Whisky

Australian whisky is a fast-growing category in the spirits industry. Since the 1990s, almost 300 new distilleries have opened. The history of Australian whisky dates back to 1820 with the legalization of distillation in the country, but until 1990 whisky production was limited to a few large commercial companies. This was due to the Distillation Act of 1901, which restricted smaller distilleries from obtaining a license. Bill Lark played an instrumental role in overturning this law, and in 1992 he made history by being the first person in 153 years to take out a distillation license in Tasmania. Australia is now home to several award-winning craft distilleries, including Sullivan’s Cove which was awarded World’s Best Single Malt Whisky at the 2014 World Whiskies Awards.
