Bimber Sherry Cask #42 is a unique single cask malt from the promising new Bimber distillery in London. The whisky matured in ex-Pedro Ximénez sherry cask #42, imparting bright and rich fruit-forward notes. It was bottled on 7 May 2020 at 58.1%. On the nose, the whisky is rich and sweet with aromas of cranberries, redcurrant jelly, apple pastries, rum-soaked raisins, cinnamon rolls and chocolate gateaux. The palate is oily with notes of nutmeg, anise, fruit-packed sponge cake, gingerbread, dark chocolate, liquorice and mentholated oak. The finish has a lingering sherry sweetness with a touch of white pepper and mint leaf. Only 329 bottles of Bimber Sherry Cask #42 have been released.
