Heimdallr is the ever-watchful guardian of Bivrost, the shimmering bridge between worlds. It seems fitting, then, that he represents the first of the Æsir, a new collection from the Aurora Spirit Distillery, the northernmost distillery in the world. Crafted from heritage Norwegian barley and matured in carefully selected Rye and Amontillado-seasoned casks, Bivrost Æsir Heimdallr is a true testimony to Arctic craftmanship. The whisky matured in a modern Viking longhouse, where extreme temperature shifts and an average yearly temperature of just 0.6°C ensure a slow and complex maturation. Fruity and elegant aromas of apricot, honeyed malt and roasted nuts are lifted by rye spice and gentle sherry sweetness. Balanced and complex on the palate, caramelized orange, dried fruits and almonds meet rye-driven pepper, soft oak, cinnamon and a touch of coastal freshness. The finish is long and warming with nutty Amontillado dryness, chocolate, vanilla and a hint of glacier-cool minerality.
