Ever since its founding in 2016, the Aurora Spirit Distillery has been pushing boundaries. And now, after years of research and experimentation, the first-ever whisky made exclusively from barley grown north of the Arctic Circle is ready to be shared with the world. Bivrost Arctic Barley has been fully crafted using Arctic barley cultivated beneath the Midnight Sun at the Heimdal Farm in Alta and harvested in 2019 during the short Arctic summer. The single malt matured for 5 years in a second-fill Oloroso sherry cask, and is bottled at a cask strength of 57.7% ABV. As it was drawn from a single cask, only 292 individually numbered bottles are available. With this rare expression, Aurora Spirit explores the issue of terroir in whisky and aims to answer the question: “Can the place where barley grows shape the character of whisky?” How do Arctic conditions influence the production of whisky, from the grain itself to the mature spirit? Now that Bivrost Arctic Barley is out in the world, it’s time for you—and your taste buds—to be the judge.
