Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky. Distilled from clear wort during the winter of 2006 with a slow distillation regime, very high and narrow cut points we collect the lightest most delicate flavours from their barley malt. This winter release contains whisky from 6 first fill Bourbon barrels. Cask 080/2006, 081/2006, 082/2006, 083/2006, 084/2006, 085/2006 which were filled on the 16th December 2006.
