The Irish whiskey industry saw a severe decline in the 20th century, so much that by the 1980s there were only two operating distilleries left. Dingle is the first new purpose-built and privately owned distillery in Ireland in over 150 years, as well as the first distillery outside of Midleton to release a single pot still whiskey—made using a combination of malted and unmalted barley. Dingle Fifth Single Pot Still Release Cask Strength is the fifth and final release in the small batch Single Pot Still series, dedicated to this uniquely Irish style of whiskey. It matured fully in ex-bourbon casks to allow Dingle’s flavour profile to shine through, without being overpowered by the cask influence. A total of 9000 bottles were released in 2022, including 1000 bottled at a cask strength of 59.5%. The whiskey is rich and smooth with notes of dried raspberries, butter mints, white chocolate, flaked almonds, soft wood spice and leather, ending in a long, memorable finish.
