The Irish whiskey industry saw a severe decline in the 20th century, so much that by the 1980s, there were only two operating distilleries left. Founded in 2012, Dingle is the first new purpose-built and privately owned distillery in Ireland, in over 150 years. The sixth and final release in Dingle’s Single Malt Batch series, explores the interaction of single malt and fortified wine. This unique expression matured fully in Tawny port casks (a first for Dingle), delivering a wonderful intensity and layers of sweetness. A total of 15,000 bottles have been released, of which just a thousand are bottled at a cask strength of 60.4%. Dingle Single Malt Sixth Small Batch Release Cask Strength has aromas of thick cut marmalade, butterscotch and crystallised ginger. The palate brings deep flavours of fruit and spice, with hints of crushed cranberries, dark chocolate and gingerbread. The finish is sweet and lively, with lingering ginger and honeyed dates.
