El Dorado Rum Versailles 2002 is a unique rum from the Demerara Diamond Distillery in Guyana. The rum was distilled in 2002 in the single wooden Versailles pot still, which is one of only two original wooden pot stills left in the world. It matured in ex-bourbon barrels in the tropics for over 12 years, before being bottled in 2015 at a cask strength of 63%. El Dorado Rum Versailles 2002 is a delicious, well-balanced rum with aromas of sweet vanilla, honey, caramelized sugar, liquorice and cinnamon on the nose. The palate is warm and dry with sweet notes of dried fruit, vanilla, toffee, almonds and oak, with a round and sweet finish. The historic Versailles Still is over 250 years old. The wooden pot still was constructed at the Versailles Estate, one of the smallest distilleries in Guyana. It was moved to Enmore in 1977, and then to Uitvlugt in 1993. It now operates at the last remaining rum distillery in Guyana, the Diamond Distillery. The Versailles Still produces a highly flavorful and aromatic rum.
