Glendalough 25 Years Old Cask #1 is a Single Malt Irish Whiskey from the Glendalough distillery. And when we say ‘from’, we mean sourced by, as Glendalough opened its doors in 2011. This whiskey was distilled at Cooley (which was the only active Irish distillery together with Midleton and the Northern Irish Bushmills in the time this whiskey was made). This 25-year-old gem is the first Irish single malt that spent time in Irish oak casks. The casks were made from trees in the forest surrounding the Glendalough distillery. The whiskey first matured in heavily charred ex-bourbon barrels before being transferred into Oloroso sherry casks. It then received a second finish in virgin Irish oak. After a total maturation of 25 years, the whiskey was bottled in 2019 at 46% ABV. The Irish craft distillery Glendalough was founded in 2011 by a group of friends. The distillery draws inspiration from the legend of St. Kevin and the blackbird, which is portrayed on their logo. As the story goes, a blackbird once landed on St. Kevin’s hand while he was praying. St. Kevin proceeded to stand still for weeks to let the blackbird build its nest, and he did not move again until all the fledgelings had flown away: it takes patience to create something good – like whiskey, which takes a very long time to mature. Only 380 bottles of Glendalough 25 Years Old Cask #1 have been released. It comes in a beautiful wooden box, which takes up two spaces in a box.
