Ichiro’s Malt Chichibu The Peated 2010 is a heavily peated single malt from the Japanese Chichibu distillery. It was distilled in 2010 and matured for 3 years in a combination of ex-bourbon casks, port pipes and puncheons. It was bottled in 2013 at 53.5%. The whisky contains 59.6 ppm (parts per million), referring to the phenol level of the malted barley. Without getting too scientific, here’s what that means: a whisky’s peatiness is determined during the malting of the barley. For peated malts, the distillery first burns peat in a kiln. The compounds released from the burning peat are called phenols. The longer the barley is exposed to the smoke, the higher the ppm and the smokier the final whisky. A typical peated Islay malt has about 40 ppm; at 59.6 ppm, Ichiro’s Malt Chichibu The Peated 2010 is significantly smokier. 6700 bottles were released.
