Kavalan has been spearheading the Taiwanese whisky industry since it opened back in 2005. The water that is the lifeblood of the distillery comes from the mountain snow melts, while the sea and mountain breezes waft over the ageing barrels. It was founded by Tien-Tsai Lee, who visited the very best Scottish and Japanese distilleries in his quest to develop Taiwan’s first whisky. They must have done something right, because it won the double gold at the San Francisco World Spirits Competition 2012. Kavalan 6 Years Old Sherry Cask Solist 2006 was aged in sherry cask #060821017 for 6 years before it was bottled. It has a nose of raisins, cocoa and dark fruits. The palate is creamy with cherry, plums and a sprinkle of cinnamon. The finish is long and sweet. Only 519 bottles have been produced so you’ll need to grab this fast.
