When you hear Macallan, you think sherry maturation—well, get ready, because the latest release in the exclusive Distil Your World series marks a bold departure from the distillery’s usual formula. Did someone say cognac casks? Macallan Distil Your World Paris is crafted by the Macallan team, led by master whisky maker Kirsteen Campbell, in collaboration with the Roca brothers, owners of the legendary El Celler de Can Roca restaurant. This sophisticated single malt is inspired by the culture and cuisine of Paris, and has been matured in an elegant combination of sherry-seasoned, bourbon, and (in a first for the distillery) cognac oak casks. The sherry-seasoned American oak casks provide creamy sweetness and perfumed notes, with further fragrance, tropical and toasted notes from casks that previously held bourbon. A touch of depth and soft spices are introduced through sherry-seasoned European oak casks, balanced with rich aromatics from the specially selected cognac casks.
