Dair Ghaelach (meaning ‘Irish Oak’) is an innovative and sustainable range from Midleton. Each whiskey in the series was finished in a cask made from native Irish oak, sourced from different forests across the country. For this release, Midleton selected a range of 15 to 28-year-old whiskeys initially matured in American oak bourbon barrels, and finished them for two years in virgin native Irish oak hogsheads. The oak was sourced from Kylebeg Wood on the Ballykilcavan Estate, near Stradbally in County Laois. Dair Ghaelach Kylebeg Wood Midleton Very Rare Virgin Irish Oak Collection Tree #7 has fragrant woodland spices with cinnamon and nutmeg on the nose, joined by aromatic oils and earthy pot still notes. Nectarine and white pepper create a zesty fruit note, followed by some sweet fudge and vanilla. The Irish oak shines on the palate, with rich wood tannins bringing intense pot still spices. Velvety notes of caramel, sweet stewed apple and orange peel then come to the fore, with subtle dark chocolate, honeycomb and vanilla in the background. The finish is delightfully long on fruits, spices and Irish oak.
