The Dair Ghaelach series (meaning ‘Irish Oak’) from Midleton is an extraordinarily unique series of whiskies that capture the very essence of Ireland. The project was led by Midleton’s previous Master of Maturation Kevin O’Gorman and sought both to source Irish oak in a sustainable way, and to create new styles of Single Pot Still Irish Whiskey. Each whiskey in the range has been matured in barrels made from virgin Irish oak sourced from different forests across the country. The process is so thorough that the wood can be traced back to a single tree in the forest! The result is that each release is a special reflection of that forest’s character. The Midleton Very Rare Ghaelach Knockrath Batch 1 Tree #6 was first matured in American Oak Bourbon barrels and then finished in Irish Oak Hogshead casks made from wood grown on the Knockrath Estate. The nose has notes of toasted wood, coconut, vanilla and roast coffee as well as fresh orchard fruits. The palate dances with sweet notes like chocolate, mango and honeycomb. The finish is long with plum and spice notes gently melting away. Please note: it tales up two spaces in a parcel.
