North British 31 Years Old Signatory Vintage 1991 is a rare high-age single grain whisky from the North British distillery in Edinburgh, released by independent bottler Signatory Vintage for the Cask Strength Collection. Grain from the North British distillery is mostly used as a constituent in blended whiskies, including Johnnie Walker and Famous Grouse, but it’s delicious on its own as well. This sherry-matured release offers fruity layers with notes of butterscotch, candied citrus peel, honey, clove and cinnamon. The whisky was distilled on 16 October 1991, and aged for over 31 years in a refill Oloroso sherry butt. It was bottled on 3 October 2023 at a cask strength of 56.1%. Only 560 bottles were released.
