After opening their world renowned whisky bar in Dornoch the Thompson Brothers decided to set their sights even higher and built their own distillery. This crowdfunded venture has proved very successful and in addition to their own distilling activities the brothers have a side-gig making independent bottlings of single cask whiskies and rums. In a cheeky nod to Scotland’s early history (and maybe the brothers’ own adventurous spirit), the label around this Orkney Single Malt 20 Years Old Thompson Brothers 1998 features a sword-swinging Viking. The drink is anything but rough though. There is a whiff of sea salt on the nose with zingy fruits, lemongrass, candied nuts and just a touch of smoke. The palate takes those initial fruit flavours and develops them into stewed fruits and honey with a little pepper. The finish is all oak and orange. With only 353 bottles produced this is definitely a bottle to get your hands on before you are number 354.
