For centuries the Isle of Raasay was known for illegal distilleries, but that all changed when Bill Dobbie and Alasdair Day first met in 2013. Forming R&B Distillers they chose the Isle of Raasay for their new venture. And so on September 14 2017 the first legal whisky distillery on the Isle of Raasay was opened. Because it takes at least three years for Scotch Whisky to mature, R&B Distillers released the While We Wait bottlings to tide us over until the Raasay Single Malt could be released. The While We Wait series is not distilled at Raasay but the flavour profile is similar to what can be expected from real Raasay. This Raasay While We Wait Slightly Peated is from the ‘Last Orders’ bottling in 2020 and is now no longer produced. The nose has notes of burnt toffee, lemon peel and a grassy scent with a background of peat smoke. The palate is light with flavours of lemon and honey developing into orange peel, coffee and chocolate. The finish contains some herbal notes and a little smoke.
