Redbreast 21 Years Old is an Irish Single Pot Still, meaning it is distilled at one single distillery from a mix of malted and unmalted barley in a pot still. This used to be the most popular style of whisky back in the 19th century, but once the 20th century came around people started preferring blends. The poor Irish single pot still languished in the shadows for a while, and by the 1980s Redbreast was one of only two remaining single pot whiskeys. It even had us worried for a while when it disappeared off the shelves in the late 1980s before being relaunched in 1991. This Redbreast was triple distilled in copper pot stills before being matured in a combination of American bourbon barrels and first-fill Spanish Oloroso sherry butts. It has a fruity nose with mango, pineapple and banana as well as notes of caramel and vanilla. The palate is creamy with apples, dark cherry, wood, cloves and nutmeg. The finish is long with more fruits, grass, sherry and barley.
