In Dufftown, home of the Singleton, they coined a saying that went ‘Rome was built on seven hills and Dufftown stands on seven stills.’ This might give you a clue about the importance of whisky to the Dufftown area. While not every one of the original seven stills is still active, there is still quite a lot of whisky coming out of the Dufftown area, like The Singleton of Dufftown 21 Years Old Trinity Cask Harmony. The magic of this whisky comes from its combination of three different cask styles. Only the best Pedro Ximenez Oloroso and ex-bourbon casks are hand selected by Master of Malts Maureen Robinson and her team and then the final spirit is married in European oak casks to create an incredibly rich and layered dram. The Singleton of Dufftown 21 Years Old Trinity Cask Harmony has a nose of sweet sherry, peaches and ginger. The palate displays creamy toffee, burnt orange and treacle while the finish is long and dry with whiffs of smoke.
