Gaia 1.1 is the very first release in Waterford’s new Arcadian Series, which focuses on traditional and sustainable ways of farming and distilling. A century ago, organic whisky was common in Ireland, but nowadays it’s rarely seen. Waterford Distillery decided to change that and produced the very first modern organic Irish whisky. Organic Gaia 1.1 was distilled in 2016 from barley grown by several organic farmers and matured for 4 years in a combination of premium oak casks. It was bottled in September 2020 at 50% ABV and released in October 2020.

Safe packing
