“I would prefer barley be fed to pigs than it be used to turn men into swine.” So said Lady Jane Franklin, the wife of the Tasmanian Governor in 1838. The Governor agreed with his wife, and banned whisky distilling throughout the state. It wasn’t until 1991 that these laws were loosened up and not long after that Bill Lark, the father of Australian Whisky, opened his famous Lark Distillery. Since then Tasmanian Whisky has taken the world by storm, with Sullivans Cove French Oak Cask being awarded World’s Best Single Malt at the 2014 World Whiskies Awards, the first whisky made outside Scotland or Japan to win. There are also the WIlliam McHenry Distillery and The Belgrove Distillery, which was the first to produce rye whisky. These days there are over 22 whisky distilleries in Tasmania, the most of any state in Australia.
